Popping up for healthy takeaway lunches. About two months ago we started selling lunch from the unit – things we’ve made for other jobs, recipe ideas we’re trying out and leftovers from catering we have provided locally to clients in Devon. More and more people, working on the Industrial Estate and nearby, are popping by for their healthy, takeaway lunches. So far we have made tagine with cous cous, hot soups, cold fork buffet options like vegetarian tarts, frittatas, polenta bakes and selections of delicious, seasonal and creative salads. There’s been a positive response and we hope to serve more and more people as the word gets out.
The other week, we were asked to experiment with Tideford’s new range of miso so Heidi, who is doing work experience with me at the moment and I made a delicious white miso roasted cauliflower which could be served warm as a side or cold as a salad. It was well received with several Tideford employees popping by to give it a try!
Here is the vegan, gluten free and delicious recipe;
x1 local organic cauliflower
x1 cup Hodmedod quinoa
2tbs sesame oil
1tbs rapeseed oil
1tbs Tideford Organics white miso
2tbs rice vinegar
1tbs minced ginger
handful of chopped dates
2tbs sesame seeds
Floret and blanch the cauliflower. Roast with 1tbs sesame oil and the rapeseed oil. Meanwhile cook the quinoa. Combine the mison, other tbs of sesame oil, vinegar, mirin & ginger and taste. It mind a little more mirin or ginger. Toss the roasted cauliflower, quinoa, dates & dressing. Toast the sesame seeds and sprinkle on top. We served this with another two salads and tasty savoury treat at our takeaway lunch pop up – it sold out that day!
